Orange nutmeg waffles

orange-waffles

This is one of my favorite ways to make waffles.

For eight waffles:

1/2 c butter
2 T sugar
1/4 t salt
2 eggs
2 t vanilla
2 T baking powder
1 cup milk
2 cups flour
1/2 t nutmeg
zest of 1 orange

Melt the butter, and then beat in the sugar, salt, eggs and vanilla. The mixture should look thick and fluffly. Add the baking powder, and then a cup of the flour. Alternate flour and milk until everything is added. Mix in the nutmeg and orange zest, and let sit for at least 15 minutes or so before baking in a waffle iron.

Use 1/4 to 1/3 cup of batter for each waffle. This should make about 8.
