Pretty purple salads

Since we eat a lot of salads, and since I purchased many purple vegetables, I’ve been making many salads with purple vegetables. Most don’t really merit their own posts, since they’re not all that complicated, and what you see is what you get. However, they are awfully pretty, so I’m posting some of the photos.
The top salad is all-out purple: Red lettuce, purple cauliflower, purple carrots and purple onions, for a painterly effect.

Vitelotte potatoes add a nice touch to a nicoise salad. I made my eggs following the Orna & Ella cookbook, which basically says put them in a pot of water on the stove, heat the water until boiling, remove it from the flame at that moment and then let it sit for 10 minutes, then remove the eggs and cool them. My eggs sat for 12 minutes and they came out pleasantly soft inside. I also used regular potatoes, cherry tomatoes, asparagus, onion and red lettuce.

Just a regular salad, with finely chopped lettuce, tomatoes, cucumbers and red pepper, with some purple carrot and onion for added vibrancy. I also added carrot greens, which have a nice, savory flavor.
