Pappardelle with pumpkin seed oil and herbs
Since I think my coconut pumpkin soup recipe inspired at least one person to go out and buy pumpkin seed oil (hi mom!), I figured I’d offer a few more suggestions for how to use it.
Coconut pumpkin soup
This soup was a hit at our Thanksgiving dinner in Jerusalem. It’s a good way to prepare pumpkin left over from Halloween or Thanksgiving, but then again, it’s also a good excuse just to go out and buy pumpkin.
