Although popular with the local Arabs and Lebanese, freekeh isn&#039;t used by the Iraqi Kurds, at least my grandmother never used it. I love interesting variations of traditional dishes, so good for you for thinking this recipe up!]]></description>

I don&#039;t think it&#039;s too hard to try out new ingredients, because even if it&#039;s something you&#039;re not familiar with, if you&#039;re buying from a reputable stall (or see other people buying there) you&#039;ll probably be fine. Just ask around until you find someone who sells what you&#039;re looking for. 

You have to make a few kubbeh before you get the hang of it, but maybe you can figure it out from Sarah&#039;s blog ... and at some point, I&#039;ll be running a vegetarian kubbeh recipe, too.

Plus, my Israeli husband LOVES kubeh soup and if I could make it and surprise him, I would be wife of the year!]]></description>
