Chef Moshe Basson of the Eucalyptus restaurant told me his theory regarding freekah. He asked me how our ancestor Joseph could have stored the wheat from the 7 fat years (against the future 7 lean years)- safe from insect damage. It had to have been freekah, because the smoking destroys insects and their eggs. Makes sense to me!]]></description>
